A new barbecue business in Princeton has a familiar owner.
Local Q, which offers southern-style barbeque for take-out and delivery, has just been launched by Local Greek and Small Bites owner Tony Kanterakis and his team.
Kanterakis has a knack for figuring out what food businesses will do well in a community and what customers want, and his eateries Local Greek and Small Bites have both been big hits with Princeton residents and students. When a restaurant in town closed recently, he pondered what might be a good addition to the Princeton restaurant scene, and realized that Princeton did not have a barbeque joint.
“I also love eating barbecue,” Kanterakis said.
He happened to have an employee already working for him who is passionate about cooking barbecue. Sally Korneygay, who has lived in the Witherspoon-Jackson neighborhood since she was four years old, began working for Kanterakis when Local Greek opened in 2017. She had already been cooking barbecue for birthdays, special occasions, and pop-up menus, so the shift to offering a regular menu seemed like a natural move. She learned the art of cooking barbecue from family members, and all the barbecue sauces at Local Q are made in-house. “All my recipes are from my mother,” Korneygay said.
The barbecue-style will change up regularly at Local Q, Korneygay said. Right now, she is cooking Memphis barbecue, which she said turns the spices up a notch when compared with other barbecue styles. The meat is slow-cooked for at least four hours, she said.
Offerings from Local Q include beef brisket, pulled pork, chicken wings, baby back ribs, burgers, macaroni and cheese, cornbread, coleslaw, baked beans, macaroni salad, and french fries.
During the ongoing pandemic, Local Q will operate out of Local Greek at 44 Leigh Avenue. Employee Marios Antoniou is helping Kanterakis manage his businesses and his take-out order system.
Eventually, Kanterakis plans to find a separate space for his latest venture. He is waiting for the right time and location.
Currently, Local Q food is available for take-out and curbside pickup at Local Greek by calling (908) 854-3418. Delivery is available through Grubhub and Door Dash. Seated dining is not currently available because of the pandemic. Kanterakis said customers will soon be able to place take-out orders and delivery orders on the Local Q website.
Local Q’s current hours for take-out and delivery are: Mondays 5 p.m. to 9 p.m., Fridays 5 p.m. to 10 p.m., Saturdays 10 a.m. to 10 p.m., and Sundays 10 a.m. to 9 p.m.
On our visit to Local Greek, all employees were masked both in the kitchen and front area, hand sanitizer was plentiful, and customers waiting for pick-up orders were properly social distancing.
